Sighs..and sighs
Well recently my head is going burst on thinking what cake i should bake on Teck Chuan birthday.I wanted to make a Tiramisu but most of its ingredient is difficult to get...and does not come in small amount...for example brandy..i dont think any shop will sell like 100ml of brandy...Well i was going mad on what to make so i decided to make a Chilled Cofffee Cheesecake..but it was something i had already done...so i went to dosome researching...and came across a very interesting blog...she's a full time mom who spend her time at home...but she sell her cake at home! At home? you might think how is that possible...Her blog has lots of fans and she received award even FROM ONLINE! Her design are creative , unique and special ! She has great artistic sense..Thanks to her i learnt alot...for example using PIPING GEL to allow whipping cream to be more stiff so that it doesnt become soft in room temperature. Also i learnt how people print picture on cakes! It wasnt that complicated at all actually. You just have to buy any edible ink catridge and edible paper:) I also learnt how to make sugar paste design and sugar pearls and found out that i can use royal icing as " Glue " to make pretty designs for fondant cakes:) Well enough of talk.Going to show some pictures of her marvelous designs!Anyways before that her blog is
http://allthatmatters2rei.blogspot.com/ . You can order a cake from her as well she lives in Singapore.1 week in advance for simple design and 2 week in advance for a complicated design or 2 tier cake.
This is a fondant cake. Those pearls, butterfly and flowers are made out of sugar paste and the glowing effect are because of the pearl dust.
This is a 2 tier cake.A cake on top of another cake.It is decorated with fondnt and the pillar and top with ice cream cone. Those green and purple creams are called royal icing. They are very good for piping as they are stiff and can hold out well.
This is a strawberry cheesecake.in the middle it is instant jelly.(Tortally jelly strawberry flavour)can be bought from NTUC fairprice..anywys dont you think this simple design without any piping is just so simple and unique?Strawberries on the border and in the jelly): Too bad since she's selling this design she wont be exposing how she made the hole in the middle of the cake and put the jelly but i guess i have a rough idea on how she make it.

Curry Flavored Potato Korokke
Due to my mom and dad working all day , they hardly have any time to bring me to eat sushi. So recently i felt like eating Japanese Cuisine such as sushi etc..I tried making a Curry Flavored Croquette in other words called Korokke(In Japanese).
Ingredients:
4 medium potatoes, peeled and cut into chunks
1/4 lb ground pork
1/2 onion, finely chopped
1 egg
2 tsps curry powder
salt and pepper to season
*flour and panko (breadcrumb) for coating
*vegetable oil for deep-frying
Preparation:Boil potatoes until soften in a large pan. Drain and mash potatoes while they are hot. Saute onion and pork in a medium skillet until cooked. Mix mashed potatoes and onion and pork in a bowl. Season with salt and pepper and curry powder. Make flat and oval-shaped patties. Coat each piece with flour. Dip in beaten egg, and coat with panko at last. Fry in 350 F oil until brown. *
1 Medium Potato is around 150gram
*I didnt not coat the croquette in flour because i tried making one with flour and the skin of the croquette was thick and i did not like it*
Advice : This is a nice dish and you can make a normal croquette without adding the curry powder but my advice is not to eat this too often because the reason why U.S people are usually big in size and fat because potato is the second most consumed food in the U.S.The average American eats 120 pounds of potatoes a year. That is almost 365 per person; or a spud a day.

Easter Day Candies
Well today is easter sunday and i tried making some easter candies.Away i messed up some part which is the decoration.I bought white converture chocolate inside of White Fondue Chocolate.Well i tried melting it and the texture of converture chocolate was horrible. It was clumpy.I needed thick and watery texture so that i can decorate the chocolate.Well the chocolate was quite dull without the decoration*No choice*.Well it was messy making the chocolate.I dipped those marshmallows and cherries and strawberries into it and sprinkle some dotted chocolates on the marshmellows...It was difficult to make them have a smooth texture since the chocolate fondue was thick and it was difficult to shake off the excess chocolate on the fruits/marshmallows.Well but it taste quite nice. Will rate 4/5 for taste and 1/5 for decoration.Well 5/10 just pass lol!Bringing it to school tomorrow i made like around 60-70.Around 5-6 of them had cracks and because of that some chocolate fall off lol..And some i accidently dipped the whole strawberry.Well i will try make these again.Might buy a candy tempering chocolate machine.*(Makes chocolate reallly really smooth thin and just nice for dipping food into it)*.Well without them you can temper chocolate too but it'll take a longer time as there is many process and i bet you do not want to do because i'll be sure your kitchen will be covered in chocolate by the time you finish it.
Anyways The Recipe
Fruits/Food of choice :Marshmallows , Apples , apricot , strawberry , blueberries , cherries , raspberry( Please do make sure before dipping them the fruits must be DRY!!!! and for cherries use maraschino cherries they are the same type of cherries where most cake shop use them for decorating purposes)
1 lbs - 1.5lbs dark FONDUE chocolate(Please make sure is Fondue Chocolate.Makes around 60-70 or even 80 + covered fruits...unless you're making apples , after dipping all the fruits and there are left over you can take a baking paper put on a bowl and pour the chocolate over it and freeze it until it harden up.So when u need to use again u can just melt it)
250g of white FONDUE chocolate (Make sure is fondue white chocolate)
Method:
Melt chocolate over a double boiler. If you do not have a double boiler you can pour some water on your frying pan and boil it.After it boils put a sauce pan on top on the water and put the chocolate into the sauce pan and start melting it.After the water boil please turn your fire on the stove to the lowest. You do not want your chocolate overcook .Keep stiring until completely melt.Should have a very smooth texture , thick and watery . You may add some oil to the melted chocolate if the chocolate is too thick.Line a baking paper on your baking tray and after dipping the fruits/marshmallow put it on the baking tray. After you're done dipping all . Put it in the fridge for at least 4 hours.*Note it is better to cover only 3/4 of your strawberries. It'll look appealing. And dont pluck out the grass or whatever it is called on top of the strawberry , will look better*..Well i dont even to take some picture for this because it doesnt look really appealing and i'm not so sastified...Will post another picture if i do some covered fruits candies again(:

Easter SUNDAY!!!
3 more days to EASTER SUNDAY!When you talk about easter day all that comes to your mind is easter EGGs.Easter eggs every year? Isnt that BORING?! I mean...it's just chocolate in the form of a egg shape!I have decided to make some homemade easter CANDIES!!!!*Cheeerres*Went to bought the ingredient today. Before i introduce the ingredient let me introduce what i'll be making!!!
Chocolate-coated-marshmallows! Yummy!!!
Second is White/Black-Chocolate-coated-Strawberries!!..Well some of them are coated with chocolate and are sprinkle with some nuts on top of them xD
Lastly..i'm sure this'll be the nicest of all! It is Chocolate Coated-CHERRIES! OH MY GOD CHERRIES?Well this are not " FRESH " cherries. It's not in the season where you can buy cherries yet...It is canned cherries...but they're not bad too.I was looking the nutrition label and it has 0% fat and everything else except for sugar 2% and carbohydrates 2% as well.
Talking about strawberries the last time i bought some was around Feb...FairPrice was promoting strawberries from South Korea and it was real cheap..around 2$ i bought 2 punnels and used some for making my fruit tarts..But i was shock that it actually raised to 6 DOLLARS PER PUNNEL FOR THE SAKE OF MARY!!!And found that it was actually organic and natural bla bla bla strawberries import from the GREAT GREAT GREAT United State.Well i was actually shocked to find out that almost 90% of the punnels have big and red juicy strawberries, looked really fresh.Nothing best than a fresh fruit...Usually when you buy fruit you'll want a big and fresh and juicy one..but instead i want a small one this time..because strawberries in every punnel is almost thrice the size of you EYES!!!And it wouldnt be cute and nice and easy to eat if i were to use such big strawberries in making the candies...i had a hard time choosing which punnel to buy...well anyway only bought 250 g of white chocolate dont think enough to coat most fruit/marshmallow into all white chocolate...guess that i'll use white chocolate as decoration and might making some strawberries coated with white chocolate=)Oh yea i bought my cherries $7!And able to get some juice from the cans xD can use them to make some cherry cupcakes the next time xD=) $7 for around 55 cherries i think that's quite worth it....i think it's like 500g of cherries excluding the weight of the bottle and the cherry syrup in it..Going to make them on sunday and bring them to school on Monday and share them with the whole class and with the HongKong Exchange Students!! =) Well going to view my new apartment now again!HAPPY HOLIDAYS(:
